This was a hit for breakfast!

Prune Nut Bread

Joe decided that he wanted to make a “coffee cake” to serve our guests along with our normal, full breakfast. We have guests from Zurich, Switzerland, Jacksonville, Florida and Wales in the UK  staying at our Illinois bed and breakfast and Joe thought this might be fun. Prune Nut Bread seemed like it might work because Joe was itching to do something with prunes.

 

 

 

 

Here is the recipe:
1C dried prunes, chopped
2T orange zest
1C orange juice
2C all purpose flour (sifted if you choose to)
3/4C sugar
3t baking powder
1/2t salt
1/2t ground cinnamon
2 beaten eggs
2T salad oil
1/2C chopped walnuts or pecans

Combine prunes, orange zest and juice and let stand for 1/2 hour. Sift together dry ingredients. Combine eggs, oil and prune mixture and add to dry ingredients and mix well. Add nuts.
Turn into a greased 9x5x3 loaf pan and bake @ 350F for 55 minutes. Remove from pan and cool before serving.
